Our Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside.We choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging.These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.

Preparation and Usage

The nose
Rich with dark fruit, cherry, raisin, fig and Christmas pudding. Floral notes with lemongrass, citrus and a touch of nutmeg.


The taste.
Sweet and smooth, with butterscotch, honey and peppercorn, dried fruit, maraschino cherries and brown sugar.


The finish.
Ginger spices a touch of almond and earthiness.
